Meat is one of the most widely consumed human foods which contains high levels of protein and has a special place in the world diet. The meat consumed by humans can be broadly grouped into two categories: white meat and red meat. Typically, livestock meats such as beef and mutton belong to the category of red meat and poultry and chicken belong to the white meat category. In addition, fish is usually classified as white meat. The amount of protein, fat and other nutrients in meat varies according to the type of meat.
Although Iran is a significant producer in the field of meat, but annually large quantities of red meat, including beef, is imported to meet the domestic demand. Among countries supplying Iranian meat are India, Central Asian and Latin American countries.
